ingredients
- 2 tablespoons of olive oil
- 2 green onions, minced, whites and greens separated
- 1 minced garlic clove
- 2 red bell peppers, cut into half-inch squares
- 1 tablespoon of cornstarch
- 1 tablespoon Everclear
- 1 cup of milk
- 8 ounces grated Monterey Jack cheese
- 8 ounces grated medium cheddar cheese
- 2 tablespoons adobo sauce from a can of chipotle
- 2 tablespoons of green pepper, cut into cubes
- 1 chopped jalapeno
- 1/2 cup chopped cilantro
directions
- In a frying pan, heat the olive oil over low heat for a few minutes.
- In the oil, sauté the green onions and garlic for a minute before adding the paprika.
- Continue to cook over medium heat until the peppers have softened, about five minutes.
- In a small bowl, mix the cornstarch and Everclear to make a paste.
- Heat the milk over low heat in a medium saucepan. Add the slurry to the milk, increase the heat to medium, and bring to a boil.
- Turn off the heat and add grated cheese. Let the remaining heat melt the cheese, then stir in the adobo sauce, green peppers, jalapeños, 1/4 cup cilantro and pepper.
- Mix well until all the cheese is melted and the fixings are evenly distributed.
- Pour into a festive bowl and top with remaining 1/4 cup chopped cilantro, sliced jalapeños, and sour cream. Add any other favorite tasty toppings.
Gluten free cauliflower bites

ingredients
- 2 liters. frying oil
- 1/4 cup cornstarch
- 1/4 cup rice flour
- 1/4 cup blended gluten-free oats
- 1/4 cup of gluten-free flour
- 1/2 tsp. baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup of ice water
- 1/4 cup Everclear
- Cauliflower head, cut into florets
directions
- In a heavy bottomed skillet, heat the frying oil to 350°F (180°C)
- While the oil is up to temperature, combine the flour, baking powder, salt, water, and Everclear in a bowl. whisk until smooth.
- Cut the head of cauliflower into small florets.
- Coat the cauliflower in the batter, and fry three to four florets at a time until golden brown (about 6-7 minutes). Remove from oil and let cool on a paper towel-lined tray. Enjoy with your favorite dipping sauce.
